P.D.O. Manchego

It is the best-known sheep cheese in Spain, with Protected Designation of Origin Manchego.

The great cheese P.D.O. Manchego La Mochila is born with a secret recipe created by our Cheesemaker, the third son of the founders, together with a very strict selection procedure of the farmers that will enable the recipe’s compliance.
